A whole new breed of Tags

It's nearing 5:oo pm, time to start thinking about what to cook for dinner. Do any of you dread this time of day as much as I do????? Well, I have been presented with an "I Love Your Blog Award" by Lindsay which is attached to a tag. Just because I'm CRAZY I decided to change things up. First off, I love your blog too! As for the tag, I'm doing my own thing. Lately I've really been into trying new recipes. Therefore, this is now going to be a recipe tag. Here are the rules:

Post one of your favorite recipes on your blog. It can be ANYTHING. Then, come to this post and leave a comment so that I can go and check out your post. Then tag other people to do the same. Hopefully we can get some really good new recipes to cook for our DARLING families.

Chicken Pot Pie

15 oz pkg of pie crust (I use Pillsbury pie crust found in the refrigerated section)

Filling:
1/3 cup butter
1/3 cup chopped onion
1/3 cup flour
1/2 tsp salt
1/4 tsp pepper
1 1/2 cups chicken broth
2/3 cup milk
2 1/2 cups shredded or cubed chicken
2 cups frozen mixed veggies, thawed and drained (I actually use fresh veggies, whatever floats your boat!)

Heat oven to 425 degrees. Dust bottom of pie pan with flour. Put one of the crusts on the bottom of the pie pan.

In a medium saucepan, heat butter, then add onion and cook 2 minutes or until tender. Stir in flour, salt, and pepper until well blended. Gradually stir in broth and milk. Cook, stirring constantly until bubbly and thickened.

Add chicken and veggies. Remove from heat. Spoon chicken mixture into pie shell. Top with second crust and flute edges. Cut slits in top of use cookie cutter to cut out shapes and replace leaving small space for steam to escape.

Bake at 425 for 30-40 minutes or until crust is golden brown. Let stand 5 minutes before serving.
